Hyssop

Hyssop (also known as iron or bee weed) is a wild herb that is relatively easy to find in nature in Austria and Germany. It is not only used as a spice, but is also used in medicine, cosmetics and the perfume industry.

As a spice, the dried, long, thin leaves have a slightly bitter, aromatic taste, which is remotely reminiscent of thyme or rosemary. Because of its digestive effect, hyssop is also often used in fatty dishes.

Already in the Middle Ages, the wild herb was used in medicine as a medicinal plant to treat stomach and intestinal complaints, colds or even epilepsy. Today, hyssop is used in many ways in natural medicine and homeopathy.

You can buy either the dried leaves, powder or hyssop oil, but you should dose carefully when using it in the kitchen because of its intense taste. During our first attempts with our meat bars we got too much of it and the test was useless. In the end, however, we were able to find the perfect harmony in combination with rosemary and oregano as spices in beef bars.
